Ask a waitress at Fatty ’Cue, Zak Pelaccio’s Malaysian barbecue restaurant, whether the cocktail menu is Asian-themed, and her response is a heavily qualified, “Not exactly.” But you’d never know you weren’t sitting in Kuala Lumpur after taking a sip of the Foreplay Cocktail. (If you can order without blushing, that is.) “It’s like a grown-up grapefruit soda,” Schuman says of the drink, a mix of bitter Aperol, the tart Asian fruit known as yuzu, sparkling wine and grapefruit. Sweet and not overly boozy, this is the perfect cocktail to down with a plate of pork ribs. “It’s a huge crowd-pleaser.
